How was everyone’s weekend? Did you do anything for mother’s day? I wish I could say we did but around here, it’s business as usual. Hubby is very vocal about the “I don’t have to do anything for you, you’re not my mother”. And so it goes…but that is a rant for another day.

Last week, I attempted some new recipes. The coconut curry chicken was not the raging success I was hoping it would be. Too bad since it made a butt load of food that we are still choking down. It wasn’t horrible but it definitely felt like it was lacking something. I’ll admit that it’s one of those dishes that tastes better as leftovers than fresh. Either way, it will not be making it into my recipe book.

This week the heat is going to hit so I’m keeping things as simple as possible. I don’t want anything that’s going to be in the oven for any length of time if I can help it. Our house is hot enough.

Tonight we will be finishing the coconut curry (and good riddance to you!). After that, I’m not too sure what meals we’ll be eating on what days. I’m going to let the weather dictate for me. When it’s really warm, I’ll be making salmon salad and BBQing garden burgers and grilling lots of fresh vegetables. I’m also going to make a big stir-fry with all my leftover veggies that will last us a couple of days.

On the garden front, I potted a few of my plants this weekend. Corn, watermelon, tomatoes, carrots, thyme and basil. I’m being awfully ambitious this year so we shall see what happens. I’ve also been giving the wild rabbits the stink-eye so they better stay out of my garden.
